thirty-one burgers, day one
We opened in April 2002 with fourteen seats, a walk-in that quit in week one, and thirty-one burgers sold before close. Nobody planned for the late shift — the late shift found us, and it never left.
Everything since has been the same argument settled the same way: grind it that morning, press it once, and keep the light on until the last person on 1200 E 6th St has eaten.
