a note from the founder

Fourteen seats, one flat-top, and a walk-in that gave out in the first week. That was April 2002. We sold thirty-one burgers on the opening day and I remember every one of them, mostly because I cooked them all myself.

Nobody sets out to run a late-night place. It happens to you. The bar crowd finds you, then the line cooks getting off shift find you, then the nurses, and one day you look up and the busiest hour of your week is midnight on a Friday.

The menu has barely moved since. Every few years somebody suggests we modernise it, and every time the people who order the same thing every week make the argument better than I can.

I still grind at four. I still work the late shift. If you come in after midnight, there is a good chance the person handing you the tray is me.
